There is snow on the ground, but inside this 96 by 26 foot hoop-house, nearly 400 feet of leafy greens are flourishing. Earlier this year, the greenhouse was constructed, and just last month, they produced their first harvest.
The greenhouse is able to produce nearly 250 pounds of greens per harvest, from spinach to kale and it is then used on a salad bar on campus less than a half mile away.
All of the locally grown produce is cultivated organically, and next year, will receive it's organic certification. The students involved in the greenhouse, say the project has given them hands-on experience, that they may not have gotten otherwise.
And the best part about the campus' sustainable project? It's a success, they can taste.
